This is the home made yogurt as prepared by Minshuku Nakagawa in Shizukuishi, Iwate.

Ingredients

  1. Milk 2000 ml
  2. Gelatin 15 g
  3. Sugar 200 g
  4. Plain yogurt 2 tbsp

Tools

To avoid contamination is is essential to boil all kitchen tools.

  1. Pot
  2. Rice paddle
  3. Tupperware
  4. Thermometer
  5. Styrene foam box (with top)

Directions

  1. Pour milk into the pot and add the gelatin and sugar. Heat the milk until 40°C. Mix it well.
  2. When the milk is heated to 40°C, turn off the stove, add the plain yogurt and mix well.
  3. Pour the mix into the Tupperware and put the lid on it.
  4. Pour warm water (40°C) into the styrene foam box. Place the Tupperware with the yogurt mixed milk in the box. Put the lid on the styrene foam box. (Keep the water temperature at 40°C when you put the lid on the styrene foam box. The temperature is the key for success.)
  5. Leave it for 4 hours, open the box and put the Tupperware in the refrigerator.
  6. Chill it until next day in the refrigerator.(You can eat it from next day.)
