Kimchi jjigae

Kimchi jjigae is a spicy Korean dish.

Ingredients

  • 2-3 tbsp. sesame oil
  • 1 block firm tofu, cut into cubes
  • 2-3 cups of kimchi
  • 1-2 tsp. dashi powder
  • 1 dash soy sauce or 1 tsp miso paste
  • 2 cloves garlic, peeled & chopped
  • 2-3 green onions, cut into strips

Directions

  1. Heat the sesame oil in a dutch oven or large pot.
  2. Add the kimchi and garlic and saute for 5 mins. For extra-spicy soup, add some of the juice from the kimchi container.
  3. Pour in enough water to thoroughly cover the kimchi.
  4. Add the tofu, dashi powder and soy sauce or miso paste. Stir everything up, bring the pot to a boil, reduce heat, and simmer for 20 mins.
  5. Add the green onions and cook for five more minutes.
  6. Taste the soup and adjust if needed. Use more dashi, soy sauce or miso paste.

Serving suggestion

  • Place soba or udon noodles in a bowl and add the delicious kimchi jjigae soup on top.
