Lotus root burger

Ingredients

  • Lotus root; 190g grated, 60g finely chopped
  • 60g onion, finely chopped
  • 50g carrot
  • 50g green beans (いんげん)
  • 60g wheat flour
  • 45g rible flour (rice flour) - or wheat flour
  • 480g carrot juice
  • Salt
  • Some parsley
  • Sesame oil
  • Soy sauce

Recipe

  1. Sauté the onion and lotus root (60g) on the frying pan. Add salt and soy sauce to taste.
  2. Mix the 190g grated lotus root, the sautéed onion and lotus root, wheat flour, and ½ tsp salt. Divide it into 5 equal parts and mould into burgers.
  3. Pan fry the burgers in a nice amount of oil until brown.
  4. Cut the carrot into 5mm cubes, and steam cook them.
  5. Cook the green beans in salty water, then rinse in cold water and cut into 3 or 4 pieces.
  6. Put the carrot juice and rible flour into a pot and blend together. Turn on heat and while stirring with a wooden spatula, bring to the boil. The sauce should thicken. Add salt and soy sauce to taste.
  7. Put the cooked burgers, carrots, beans and sauce on a plate. Top off with some parsley.
