Red bean sauce

From Akita Wiki

Ingredients

  • 3 Cans chopped tomatoes
  • 3 Cans kidney beans
  • 1 Block Japanese bacon (chopped, small diced) (dark smokey ones work best)
  • 2 Large onions (chopped, small dice)
  • 3 Large Peppers (chopped, small dice)
  • 3 Cloves garlic (minced, really fine diced)
  • 2 tsp Salt
  • 1 tsp Pepper
  • 1 tbsp Onion Powder
  • 1 tbsp Garlic Powder
  • 1 tsp Oregano
  • 1 tsp Cumin
  • ½ tsp Red Chili Powder
  • 2 tsp Paprika

Directions

  1. Chop all the ingredients that require chopping and set aside.
  2. In a large pot, on medium heat, put the bacon in the pot and cook until crispy, if you find it to have not enough oil pour about a large spoonful in.
  3. After the bacon is ready, place the garlic and cook until slightly brown any more and they might burn so be careful.
  4. Place the onions and peppers in next and cook until slightly soft, about 3-5 minutes.
  5. Add the tomatoes to the pot and stir into the mix. Let it come to a slight boil and stir occasionally.
  6. Add seasoning.
  7. Open bean cans and wash the beans, don't use the water in the beans, as it's too starchy. Pour the beans into the sauce and stir.
  8. At this point it is ready to go but if you want, you can add chicken into it and let it stew for a further 20 minutes.
