Lotus root burger

Ingredients
- Lotus root; 190g grated, 60g finely chopped
- 60g onion, finely chopped
- 50g carrot
- 50g green beans (いんげん)
- 60g wheat flour
- 45g rible flour (rice flour) - or wheat flour
- 480g carrot juice
- Salt
- Some parsley
- Sesame oil
- Soy sauce
Recipe
- Sauté the onion and lotus root (60g) on the frying pan. Add salt and soy sauce to taste.
- Mix the 190g grated lotus root, the sautéed onion and lotus root, wheat flour, and ½ tsp salt. Divide it into 5 equal parts and mould into burgers.
- Pan fry the burgers in a nice amount of oil until brown.
- Cut the carrot into 5mm cubes, and steam cook them.
- Cook the green beans in salty water, then rinse in cold water and cut into 3 or 4 pieces.
- Put the carrot juice and rible flour into a pot and blend together. Turn on heat and while stirring with a wooden spatula, bring to the boil. The sauce should thicken. Add salt and soy sauce to taste.
- Put the cooked burgers, carrots, beans and sauce on a plate. Top off with some parsley.
