Red bean sauce
From Akita Wiki
Ingredients
- 3 Cans chopped tomatoes
- 3 Cans kidney beans
- 1 Block Japanese bacon (chopped, small diced) (dark smokey ones work best)
- 2 Large onions (chopped, small dice)
- 3 Large Peppers (chopped, small dice)
- 3 Cloves garlic (minced, really fine diced)
- 2 tsp Salt
- 1 tsp Pepper
- 1 tbsp Onion Powder
- 1 tbsp Garlic Powder
- 1 tsp Oregano
- 1 tsp Cumin
- ½ tsp Red Chili Powder
- 2 tsp Paprika
Directions
- Chop all the ingredients that require chopping and set aside.
- In a large pot, on medium heat, put the bacon in the pot and cook until crispy, if you find it to have not enough oil pour about a large spoonful in.
- After the bacon is ready, place the garlic and cook until slightly brown any more and they might burn so be careful.
- Place the onions and peppers in next and cook until slightly soft, about 3-5 minutes.
- Add the tomatoes to the pot and stir into the mix. Let it come to a slight boil and stir occasionally.
- Add seasoning.
- Open bean cans and wash the beans, don't use the water in the beans, as it's too starchy. Pour the beans into the sauce and stir.
- At this point it is ready to go but if you want, you can add chicken into it and let it stew for a further 20 minutes.
