Soup curry

Makes enough for 6 people.
Ingredients
- 400g onions (2)
- 400g potatoes (2)
- 200g carrot (1)
- 90g aubergine (1)
- 60g green pepper (2)
- 300g chicken
- Salt & pepper
- 6g ginger
- 10g consomme (2)
- 40g curry roux (2)
- 30g curry powder
- 30g butter
- 30g ketchup
- 1,200ml water
Directions
- Chop the potatoes, carrots, onions, aubergine, green peppers into chunks. Cut the ginger in thin slices.
- Cut the chicken into bite-size pieces and add on salt and pepper.
- Fry the chicken on a high flame until oil from the chicken comes out, then switch to a medium heat. Continue until golden.
- Transfer the chicken to a nabe pot, keeping the oil from the chicken on the pan. Now add the onion, carrot and potatoes and fry to brown the edges.
- Add to the nabe pot also with 800ml of water, bring to the boil and then return to a simmer.
- Now to make the curry soup. Add the curry roux, powder, butter and ketchup to a clean frying pan. Over a medium to high heat blend the ingredients until they are all mixed. You don't need to worry about it burning over a high heat.
- Little by little add the 400ml of water to the roux on the frying pan.
- Now add this to the nabe pot. Also add the ginger and consomme.
- Continue stewing the nabe until the potatoes are tender. And check the taste, you can add curry powder, salt, or water if you need.
- When the curry is ready you can deep fry the aubergine and green pepper.
- Serve and enjoy!
