Home made yogurt

This is the home made yogurt as prepared by Minshuku Nakagawa in Shizukuishi, Iwate.
Ingredients
- Milk 2000 ml
- Gelatin 15 g
- Sugar 200 g
- Plain yogurt 2 tbsp
Tools
To avoid contamination is is essential to boil all kitchen tools.
- Pot
- Rice paddle
- Tupperware
- Thermometer
- Styrene foam box (with top)
Directions
- Pour milk into the pot and add the gelatin and sugar. Heat the milk until 40°C. Mix it well.
- When the milk is heated to 40°C, turn off the stove, add the plain yogurt and mix well.
- Pour the mix into the Tupperware and put the lid on it.
- Pour warm water (40°C) into the styrene foam box. Place the Tupperware with the yogurt mixed milk in the box. Put the lid on the styrene foam box. (Keep the water temperature at 40°C when you put the lid on the styrene foam box. The temperature is the key for success.)
- Leave it for 4 hours, open the box and put the Tupperware in the refrigerator.
- Chill it until next day in the refrigerator.(You can eat it from next day.)
